Mince pie pops

I found this amazing recipe on Poppy Deyes’ blog here and I couldn’t wait to try it out for myself! Mince pie pops – I would never have thought about baking these but they are the perfect bite size party piece!

So this morning myself, Pete and friend Aimee got to work baking to our hearts content with all the best Christmas tunes in the background.

What you’ll need

Mince meat – the Christmas kind not the beef kind

300g plain flour

4 tbsp Icing sugar

1 egg

200g unsalted butter

2 tsp vanilla extract

1 egg yolk

2 tbsp water

Cake pop sticks and cookie cutters

Let’s do this

Preheat your oven to 190C.

Mix the flour and icing sugar together then mix in the butter using your fingers until a breadcrumb consistency.

Add in 1 egg, the vanilla extract and the cold water, knead until it becomes a dough.

Roll your dough out and using a circle cutter cut out the bases of the pop. Place the cake pop stick in the middle of the base and add a small amount of mincemeat.

Then you can roll out the rest of the pastry to make the tops of your mince pie pops. Here you can use your imagination, we’ve done some cut out stars, Christmas tree and some stars on top of the pastry.

Add the top to the rest of the pop and seal together using your fork crimping the sides down.

Place on a baking tray and brush the pops with the egg yolk so they brown nicely in the oven and cook for 20 minutes.

We sprinkled a little icing sugar when they had cooled and dug in. Ohemgee these are amazing and so fun and easy to make! Enjoy, we’re making them again to leave out for Santa, which I’m sure he’ll enjoy! 😉
