Well, it’s been a hot second since I’ve posted on here. I had a baby in January and then we went into a global pandemic In March. Bloody hell, what a year eh?
With this now being our third lockdown, I think it’s safe to say there’s not a whole lot to look forward to when once the weekend rolls around. So I’m hoping by making a little lockdown series it gives not only myself ideas of things to do at home to keep us and the kids sane but anybody reading this who wants to mix up the endless days of Netflix.
I know it’s valentines day before pancake day, but I don’t care and I’m starting with pancakes because Yolo. And also why just have one day dedicated to pancakes….

When I made this the kids went mad for it, so for pancake day we’ll definitely be doing another pancake buffet board, however it’ll be wishful thinking to have it in bed, but a girl can still dream! *hint to my husband who will be reading this hint*

The pancake recipe I have written about before here. These make the lightest fluffiest pancakes of dreams. Personally, I’m a huge lover of bacon and syrup pancakes but I had forgotten how bloody wonderful a bit of Nutella and Strawbs are! The best part of a big plate like this is you can dip in and out of different combinations!
But of course the fun of a platter is too make it your own. I have seen loads of different types on pinterest, including bacon and egg pancakes, or full of fruit like blueberries and raspberries. Mine of course is very sugary, because well we’re in a lockdown so treat yo’self.
Why not have a lazy Sunday morning with a platter of pancakes. What could be a better start to the day. Plus if you have kids they might love helping make as well as eat them so it’s a double win!
