Brunching with bacon pancakes

Happy Friday! One day until the weekend yaaas!! I lacked a lot of inspiration towards the end of January due to a) January blues and b) feeling like I didn’t know what to write about that people would read. So here’s to content that I love where I feel like I’m chatting to my pals and as you know I’m a huge foodie, so welcome to my first food Friday post. Every Friday there will be a recipe or a place I’ve been that have great food or drinks that I want to share with you!

So my first post starts with my FAVOURITE meal time – Brunch! Literally nothing better than going for brunch and meeting your friends to chat about weekend plans or what happened the night before, or waking up around ten (a distant memory since having children and puppies!) and making pancakes on a sunny Sunday morning.

So that’s exactly what I’m bringing you today – Bacon and syrup pancakes. Now I know savoury pancakes are a little controversial but bacon pancakes are just the staple of brunch in my opinion! Especially fluffy pancakes! So here’s my recipe for you!

Ingredients

  • 125g plain flour
  • 3 eggs
  • 1 teaspoon baking powder
  • 150ml semi skimmed milk
  • 1 teaspoon vanilla extract

To serve with bacon and maple syrup

I put the bacon under the grill to begin with, and the put the flour and baking powder into a bowl.

Next I separated the three eggs yolks from whites, and added the milk to the egg yolks, then mixing it with the flour mixture and adding some vanilla extract. Then whisk the whites to form stiff peaks, once done fold the whites into the rest of the mixture. Voila, you’re ready to start cooking!

Pop your frying pan on a very low heat, but make sure it gets nice and hot, (I also used fry light as I don’t normally use oil, but doesn’t make a lot of difference.) The rest is then quite self explanatory, I used a tablespoon and dolloped some mixture into the pan making small circles, I waited around a minute or so before flipping, and then once golden you can start layering your bacon and pancakes, finishing with that drizzle of syrup!

And there we have it a perfect brunch, or a surprise breakfast in bed for your other half! Enjoy! X

    These are so lovely and puffy! Brunch is my favourite meal because, really, you can have it at any time of day. We’ve been having a lot of pancakes recently as well ๐Ÿ™‚

George has now gone down for his morning nap, and J and I are finally doing some school work ๐Ÿ˜ซ๐Ÿ˜ซ anyone else totally over being teacher, cleaner, cook, entertainer and everything else that goes with it. I love him, but this has been the most challenging 3 months and I cannot wait to do that dreaded school run again!
